I think you're correct when it comes to Greshams Law and its application to bitcoin, but there is one thing I am on the fence about with this analysis.

Adoption is still relatively paltry compared to the market at large. This will change, I believe, but right now like you said, it is a commodity of enthusiasts. A valuable trinket so to speak.

I'd also state that the fiat value of the Schilling in Gresham's scenario of the base metal coin versus the silver was one to one, whereas the comparison is difficult to make with bitcoin, whose fiat value isn't the same. This could be irrelevant, but I think it could be an issue with the analogy to USD/BTC

Lets say all the people storing their bitcoin on coinbase have had their bitcoins used or traded with. How could someone track the history or origin of their bitcoin to see where it has been?
